Leek and Mushroom Risotto


1oz butter
1tbsp olive oil
1 leek
1 clove garlic, crushed
10oz risotto rice/5oz
1.5 pts veg stock/0.75pts
9oz mushroom sliced/4.5oz
2oz cheddar or any cheese


Serves 4/2

Put butter, oil, leeks and garlic into a large pyrex bowl, cover with clingfilm. Put on high in microwave for 5 mins/4mins.
Stir in the rice, then stock and seasoning.  Cook uncovered for 10 mins/9.5.
Throw in mushrooms and stir.  Cook on high, uncovered, for 6/5.5mins.
Mix in half cheese, let stand for 5 mins.
Put cheese on top.

Sounds lovely!!!

I always cook rice in the microwave, I don't know about everyone else but for me it's always fluffier than when cooked on the stove.

I'll have to give that a try. I always cook rice on the stove top - tightly covered over a very low heat.

Some oriental rice is meant to be sticky but if you want fluffy "ordinary" rice try putting it in a sieve and rinsing it under the cold water tap for a few moments before cooking. The washing removes excess surface starch making the grains separate more easily.

Mrs Cod always cooks the rice as I usually manage to burn it to the bottom of the pan.  We got our first microwave about 2 months ago and its only been used once so I might try your recipe Linfy, thanks.

Must be nice having a canteen at that hour.  Roll Eyes

The power station have a lunch-time and evening canteen.

Only sandwiches from the machine and choccies and crisps out of hours :-(

Haven't tried it, but I am sure it would be gorgeous with bits of cooked bacon and peas thrown in.  Glad you tried it Reens and enjoyed it.
