That's my treat shorty!

150g cornflake crushed into crumbs
2 tablespoons sugar
50g melted butter
2 eggs, separated
i tin condensed milk
Juice 2 lemons
Zest of 2 lemons
100ml double cream

Mix corn flake crumbs, sugar and melted butter together.
Remove 2 tbsp of the mixture.
Press remaining mixture of crumbs to evenly form crust in the bottom of a flan tin or cake tin (line it with greaseproof paper first)

Beat egg yolks until thick.
Combine with condensed milk.
Add lemon juice and lemon peel.
Stir until thickened.
Beat egg whites until stiff then fold into mixture.
Beat cream until thick them fold into mixture.
Pour into flan tin.

Sprinkle with reserved crumbs.
Freeze until firm.
Remove from freezer 10- 15 minutes before serving.

Enjoy!  (it's got raw eggs in so not suitable for pregnant ladies and old folks)

Glad to hear it Trefs!  I know what that Shell's like  Grin

It's lovely and lemony- I've still got 4 bits on the freezer and I'm very tempted to go and half inch a bit (I've got the day off to I'm at home - yay)
