I made a very nice meal once out of some rice, half an onion, some red lentils and a veggie stock cube.

I've never been able to repeat it though, no matter how many times I try.

nice to see someone can do it because I CANT Embarrassed I look and think oh no what am I going to make ,then along comes my husband and rustles up something really nice. He usually writes it down in a book so he can do it again and totally puts me to shame. Cry I will ask to see his book and put some of his stuff up Grin
How did you cook it, did you fry it, boil it? Grin

maybe some ideas for me and I can surprise him Grin

Easy:

Soften the onion in some oil.

When soft and translucent add the lentils and continue to cook for a few minutes stirring to prevent sticking.

Add the rice (about 2x the lentils) and a double measure of veggie stock (not too strong).

Cove tightly and simmer over a low heat till the liquid is absorbed.

Tonight I am rustling up a bread and butter pudding out of some hot cross buns I have left over in the bread box.  The only thing I had to buy was nutmeg, otherwise it's all stuff already in the fridge.

I add cream to mine, it's better in my opinion.   I also pour cream over it when it's cooked and served Tongue
