Elderflower Champagne

Elderflower champagne is a clear, sparkling drink that is mildly alcoholic.

4 large elderflower heads
1kg of sugar
2 lemons - zested & juiced
4 tablespoons of white wine vinegar
10 litres of cold water

Remove livestock from flowers.

Put lemon juice, rind and flowers in clean bucket.  Add sugar and wine vinegar.  Pour on the water.  Cover and leave to stand for 24 hours.  Stir gently every six hours.

Sterilise the bottles either using sterilising chemical tablets or boiling water. If you use chemical tablets, rinse the bottles afterwards so that the chemicals don't kill the yeast in the champagne mixture.

Sieve the contents of the bucket into your sterilised bottles using a cunning array of muslin, jugs and funnels.

Once all the bottles are full, put the caps (or corks) on firmly and place somewhere not too warm or too cold. A garage shelf is ideal.  Releasing the fizz every couple of days or the bottles will burst.

After two weeks the champagne is ready for drinking. However, the taste does improve with time and can be left for up to two years.

Serve chilled.

That sounds really nice Gribbs.  I tried unsuccessfuly many years ago to make Elderflower wine.  I think I overdid the quantity of elderflowers and it ended up tasting rather like cats wee :(

Yeah - don't make it too strong or it tastes like what Shell imagines cats wee tastes like.

Also be caseful if you get hayfever - hubby drank loads and has a bit of an attack.
