Fruit Cake.

This cake is also suitable for diabetics.

Fruit Cake.

750g Mixed fruit
250g Dates
125g Glace cherries
125g Butter
1 teaspoon Mixed spice
3/4 cup Water
cup Fresh orange juice
3 Eggs
1 cup Self raising wholemeal flour
1 cup Plain wholemeal flour
teaspoon Baking powder
teaspoon Salt.

Line a 30 cm. square tin with two thicknesses of baking paper laid crossways.
Chop mixed fruit and dates and halve the cherries.
Combine them all in a large saucepan with butter,spice and water.
Stir mixture over a low heat until butter is melted.
Boil for 3 minutes,stirring the mixture to prevent it sticking to the base of the pan.
Remove from heat and allow to cool,preferably overnight.
Then add orange juice and eggs.
Mix well then add dry ingredients,combine thoroughly.
Spread evenly into prepared tin.
Bake for 2 hours in a preheated oven at 180C.(Fan forced oven 160C)
